Cabernet Sauvignon Blend
The 2016 growing season was warm and dry. The spring rains set up the season and good rains in January allowed very good flavour development whilst maintaining natural acid. The vintage was a couple of weeks ahead of the typical. The hottest day for summer was 35.6°C. The fruit is from a range of blocks at Koomooloo. The grapes were handpicked early in the morning, chilled and whole bunch pressed (1200L basket press) to tank to remove heavy solids. The juice was racked to barrel later the same day.

Beautiful blend of strong varietal fruit and quality oak. Intense cassis fruit supported by cocoa, leather and mocha originating from the barrel ageing, integrated tannins clearly cabernet sauvignon with a very long persistent finish. A wine of great quality. PS
