The 2021 growing season was a moderate cool winter, a wet spring, with rains starting in early October and carrying through until harvest. 100% pinot noir, clones 114, 115 and 777. Made from the juice removed after crushing, forming about 10% of the total wine made from the Pinot. Using native yeast fermentation was maintained around 20degrees centigrade, juice was oxidatively handled to remove brown pigments before fermentation. A small amount of pinot noir red wine was added after fermentation to achieve the colour and flavour desired.
